Vegan Lentil Loaf

Ingredients:

  • 2 ½ cups cooked green lentils
  • 1 ½ cups Italian style bread crumbs
  • ½ cup ketchup
  • ¼ white onion
  • ½ tablespoon fresh garlic minced
  • 2 teaspoons cumin
  • 2 teaspoons salt
  • 2 teaspoons pepper

 

Method:

  1. Preheat the oven to 350°F and line a baking dish or sheet with tin foil.
  2. Place 1 ½ cups of the cooked lentils, along with the garlic, onion, and seasonings, in a food processor. Blend until well combined.
  3. Place the mixture in a bowl along with the rest of the lentils and breadcrumbs and form the loaf.
  4. Place in a foil lined loaf pan and bake at 350°F for 15 minutes.
  5. Remove, spread with ketchup, and bake for another 10 minutes.
  6. Remove the loaf from the oven, and let it cool for a few minutes and serve!
