Vegan Chocolate Orange Pancakes

Ingredients:

  • 180 g Plain Flour
  • 15 g Baking Powder (1tbsp)
  • 10 ml Orange Extract (2tsp)
  • 20 g Ground Flaxseed (2tbsp)
  • 270 g Oat Milk (or other vegan milk)
  • 150 g Dark Chocolate (chopped)
  • 1 Orange (Zest)
  • 15 ml Apple Cider Vinegar (1tbsp)

 

Method:

  1. First things first, in a small bowl mix the ground flaxseed with 3 tbsps of warm water and leave to one side to form a gel.
  2. Put the flour, Baking Powder, oat milk, cider vinegar, Orange Extract and flaxseed mixture to a blender and blend into a perfectly smooth batter. Pour the batter into a jug or bowl and stir through half the chopped Dark Chocolate.
  3. Brush a non-stick frying pan with sunflower oil and pour in a spoonful of mixture. Cook the pancake for 1-2 minutes on each side or until puffed and golden brown on each side, repeat until all the mixture is used. You should make about 12 pancakes; keep the pancakes warm in the oven on a low heat.
  4. Melt the remaining Chocolate. Once melted whisk in 1 tsp of sunflower oil and ¼ tsp of the Orange Extract.
  5. Serve the pancakes in a stack, drizzle over the chocolate sauce and sprinkle the orange zest over the top to garnish.
