THE AMAZING CASHEW NUT SMOOTHIE BOWL

INGREDIENTS:

Makes 1 awesome smoothies bowl
The Smoothie:
  • 80g of cashew nuts
  • 1/2 a banana
  • 1/2 teaspoon vanilla powder (optional)
  • 1/2 a teaspoon ground cinnamon
  • 10g of coconut nectar (small squirt)
  • 150ml plain koko coconut milk
The rest and the toppings:
  • 100g of muesli
  • 1/2 a chopped banana
  • an equal amount of pineapple
  • 10g of chopped almonds
  • 10g of chopped pecan nuts
  • a drizzle of coconut nectar
  • mixed seeds and cacao nibs

METHOD:

For the smoothie blend all together:
  • 80g soaked cashew nuts
  • half a banana
  • 1/2 a teaspoon vanilla powder
  • 1/2 a teaspoon ground cinnamon
  • 150ml coconut milk
  • 1 squirt of coconut nectar (10ml)
  • Blend your mix on full speed for about 30 seconds – 1 minute if you are serving straight away as over blending with cause your smoothie to heat up
  • Pour your smoothie from the blender into the bottom of your serving bowl
  • Scoop 3 tablespoons of muesli (100g) into the centre of your smoothie which is already in the bowl
Chop:
  • Half a banana and an equal amount of a pineapple
  • Cover the surface of your smoothie and the muesli
  • Chop up the almonds (10) and pecans (10) and scatter over the top of what’s in your bowl.
  • Add mixed seeds to garnish with a drizzle of coconut nectar
