Superfood Bowl

INGREDIENTS:

Makes 2 Portions:
  • l 50g of uncooked quinoa
  • l 1/2 a ripe avocado
  • l 1 large handful of baby spinach
  • l 1 green apple
  • l 1/2 a cucumber
  • l 1 stick of celery
  • l 1/4 of a lime
  • l 1 tablespoon of apple cider vinegar
  • l Pinch of pink himalayan salt
  • l 10 whole almonds
  • l Teaspoon of linseed/flaxseed

METHOD:

  • Juice your apple, half of your cucumber, half of the celery stick and the 1/4 lime in your juicer.
  • Place this juice into a blender along with your 1/2 avocado, apple cider vinegar, half of the spinach and pink salt. Blend for 30 seconds on a high speed.
  • Place 200ml of water in a pan and bring to the boil, add your uncooked quinoa and turn down to a simmer for 5 minutes. Turn the heat off and allow to stand and cool whilst absorbing the rest of the water.
  • Once your quinoa has cooled split it between two bowls and top with your green smoothie.
  • Finely chop your spinach, cucumber, celery and almonds and top your bowl with this chopped mix
  • Sprinkle an teaspoon of the flaxseed over the top.
  • Serve and enjoy!
