Red Velvet Mug Cake

A super indulgent 10 minute vegan dessert!

Equipment needed: mug, 

Total Time: 10 minutes

 

Ingredients: 

  • ¼ cup all-purpose flour
  • 3 tbsp sugar
  • 2 tsp unsweetened cocoa powder
  • ¾ tsp beet powder
  • tsp baking soda
  • 1 tbsp vegetable oil
  • tsp white vinegar
  • ¼ cup cold water

 

Method: 

  1. Combine the flour, sugar, unsweetened cocoa powder, beet powder, baking soda, vegetable oil, white vinegar, and cold water in a microwave-safe mug. Stir with a fork to make sure there are no lumps or dry flour. Sprinkle batter with white chocolate chips, if using, and then microwave for 1 minute. Let mug cake stand 1 minute.
  2. Top red velvet mug cake with additional white chocolate chips, coconut whipped cream, or your favourite plant-based icing. Dig in!
