Raspberry and Cardamon Overnight Oats

INGREDIENTS:

This recipe makes 5 portion(s):

  • 900ml Milk – almond
  • 5g Mint – fresh (5 sprigs with the stalks removed)
  • 130g Raspberries – fresh (15 raspberries into the overnight oat mix, 15 saved for garnishing)
  • 50ml Maple Syrup (5 tablespoons)
  • Pinch of salt

METHOD:

  • Add the overnight oat mix, almond milk, maple syrup, mint and 15 raspberries to a bowl and leave to soak for a minimum of one hour making sure the raspberries are smashed throughout the mixture.
  • Ideally this should be done the night before
  • The overnight oat mixture will keep for three days in the fridge
  • To serve place a fifth of the oat mixture (280g) into a small bowl and 1 gram of chopped mint and mix. Serve in Fenton serving bowl and top with 3 raspberries
  • If served hot add another 50ml of almond milk and warm in a small pan
