Pumpkin seed and Fig spread

Enjoy on toast or as part of a breakfast dish such as drizzled over oats

 

Equipment needed: chopping board, knife, saucepan, blender

Total Time: 10mintues

 

Ingredients: 

  • 200g pumpkin seeds
  • 150ml of water
  • 50g unrefined sugar or alternative
  • 8 figs
  • 1 tablespoon of plant based butter

 

Method: 

  1. Melt the butter in a thick based saucepan
  2. Add the pumpkin seeds and a little water and let them soften for 5 minutes
  3. Add the figs and let it simmer adding a little water at a time
  4. It will thicken as it cooks
  5. Allow the mix to cool and them blend it
