Pumpkin seed and Fig spread
Enjoy on toast or as part of a breakfast dish such as drizzled over oats
Equipment needed: chopping board, knife, saucepan, blender
Total Time: 10mintues
Ingredients:
- 200g pumpkin seeds
- 150ml of water
- 50g unrefined sugar or alternative
- 8 figs
- 1 tablespoon of plant based butter
Method:
- Melt the butter in a thick based saucepan
- Add the pumpkin seeds and a little water and let them soften for 5 minutes
- Add the figs and let it simmer adding a little water at a time
- It will thicken as it cooks
- Allow the mix to cool and them blend it
