PEANUT BUTTER POWER BALLS
INGREDIENTS:
Makes 12 Balls:
- 170g of Buckwheat groates
- 140g whole skin on Almonds
- 50g of pitted dates
- 20g tablespoon Penut Butter
- 30g Coconut nectar
- 40 ml Coconut Oil
- 10g tablespoon Lucuma powder (optional)
METHOD:
- Firstly, weigh out all of your ingredients into seperate bowls
- De-stone your dates if you need to
- In a blender or food processor grind your almonds and buckwheat to a fine a flour as possible
- Add your lucuma powder (optional) and pulse just to incorpoate it with your flour
- Add your pitted dates and blend just untill they are all broken down, your mix should
- start to become more sticky and start to come together slightly
- Put it your peanut butter, coconut oil and coconut nectar into the blender and pulse until it completly comes together as a sticky dough
- Roll your mix into 12 equal balls and refridgetate
