PEANUT BUTTER POWER BALLS

INGREDIENTS:

Makes 12 Balls:

  • 170g of Buckwheat groates
  • 140g whole skin on Almonds
  • 50g of pitted dates
  • 20g tablespoon Penut Butter
  • 30g Coconut nectar
  • 40 ml Coconut Oil
  • 10g tablespoon Lucuma powder (optional)

METHOD:

  • Firstly, weigh out all of your ingredients into seperate bowls
  • De-stone your dates if you need to
  • In a blender or food processor grind your almonds and buckwheat to a fine a flour as possible
  • Add your lucuma powder (optional) and pulse just to incorpoate it with your flour
  • Add your pitted dates and blend just untill they are all broken down, your mix should
  • start to become more sticky and start to come together slightly
  • Put it your peanut butter, coconut oil and coconut nectar into the blender and pulse until it completly comes together as a sticky dough
  • Roll your mix into 12 equal balls and refridgetate
