Kale And Avocado Salad
INGREDIENTS:
For the dressing:
- for the dressing: (makes 200ml)
- 1 teaspoon of dijon mustard
- 1 teaspoon of coconut nectar or raw honey
- 20ml apple cider vinegar
- 150ml cold pressed extra virgin olive oil
- pink himalayan salt
- black pepper
For the Salad: (makes 4 portions)
- 2 small handful of curly green kale
- 1/2 cucumber
- 2 small carrot
- 2 red peppers
- 1 stick of celery
- 2 whole avocados
- 2 small handfuls of baby spinach
METHOD:
For the dressing:
- Place all of your ingredients into your blender (except the oil) and blend for a few minutes,
on full speed.
For the Salad:
- Finely chop your kale and lightly salt, mix well
- Add in your carrot, cucumber, peppers, spinach and celery all finely chopped
- Peel, destone and dice your avocados
- Add then into your salad
- Drizzle in some of your dressing and mix well
- Serve and enjoy!
