Kale And Avocado Salad

INGREDIENTS:

For the dressing:
  • for the dressing: (makes 200ml)
  • 1 teaspoon of dijon mustard
  • 1 teaspoon of coconut nectar or raw honey
  • 20ml apple cider vinegar
  • 150ml cold pressed extra virgin olive oil
  • pink himalayan salt
  • black pepper
For the Salad: (makes 4 portions)
  • 2 small handful of curly green kale
  • 1/2 cucumber
  • 2 small carrot
  • 2 red peppers
  • 1 stick of celery
  • 2 whole avocados
  • 2 small handfuls of baby spinach

METHOD:

For the dressing:
  • Place all of your ingredients into your blender (except the oil) and blend for a few minutes,
    on full speed.
For the Salad:
  • Finely chop your kale and lightly salt, mix well
  • Add in your carrot, cucumber, peppers, spinach and celery all finely chopped
  • Peel, destone and dice your avocados
  • Add then into your salad
  • Drizzle in some of your dressing and mix well
  • Serve and enjoy!
