Hemp Seed Breakfast Cookies

Equipment needed: large mixing bowl, handheld stick blender, oven, baking tray

Total Time: 1 hour and 20 minutes

Ingredients:

  • 3 cups almond flour
  • 1 cup dried dates pitted
  • 1/2 cup hemp seeds
  • 1 cup almond milk or plant-based milk of your choice

Method:

1 In a large mixing bowl combine dried dates, hemp seeds, and almond milk

2 Allow to sit for 1 hour to allow dates and hemp seeds to absorb liquid

3 Then add the almond flour and blend on high with a handheld electric mixer until it turns into dough

4 Preheat oven to 350 degrees F

5 Manually divide your cookie dough into 9 equal portions

6 Continue to use your hands to roll each portion into a ball

7 Line a baking sheet with parchment paper

8 Spread out 9 portions of cookie dough balls.

9 Flatten with a fork or palms of your hands.

10 Bake for 12-15 minutes
