GUCCAMOLE !
INGREDIENTS:
Makes 4 servings:
- 2 avocados
- 1/2 a red chilli with seeds in
- juice of 1 lime
- salt
- black pepper
- 1 tomato
- 10g of fresh coriander
METHOD:
- Remove the skin and the stone from your avocados and place in a food processor with the tomato (roughly chop first) , juice of 1 lime, salt and pepper
- Pulse this so that is is blended but still quite chunky and not like a puree
- Very finely chop your chilli and coriander
- Place your avocado mix into a bowl and top with the chilli and coriander
