GUCCAMOLE !

INGREDIENTS:

Makes 4 servings:
  • 2 avocados
  • 1/2 a red chilli with seeds in
  • juice of 1 lime
  • salt
  • black pepper
  • 1 tomato
  • 10g of fresh coriander
METHOD:
  • Remove the skin and the stone from your avocados and place in a food processor with the tomato (roughly chop first) , juice of 1 lime, salt and pepper
  • Pulse this so that is is blended but still quite chunky and not like a puree
  • Very finely chop your chilli and coriander
  • Place your avocado mix into a bowl and top with the chilli and coriander
