COURGETTE AND BEETROOT BURGERS

INGREDIENTS:

Makes 10 Burgers :
  • 1 tablespoons of coconut oil
  • 1 courgette
  • 2 medium beetroots (raw)
  • 1 tin of chickpeas
  • 1 tin of blackbeans
  • 1 tin of kindney beans
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 2 tsp oregano
  • 10ml tamari
  • 10ml apple cider vinegar
  • 30ml of nutritinal yeast falkes
  • 100g buckwheat flour
  • salt
  • pepper

METHOD:

Blend:
  • Finely julienne your courgette and peel and julienne your beetroot too
  • Heat a frying pan with your coconut oil and fry off your julienned courgette and beetroot very quickly for abour 2 minutes just until it starts to soften. Place this mix in a sieve and allow the water content to drain away getting your courgette and beetroot as dry as you possible can squeezing it out too.
  • Whilst that is draining add all of your other ingredients to a large mixing bowl
  • Once drained and as dry as possible add in your courgette and beetroot too
  • With a stick blender make your whole mix into a thick paste. I like to blend enough so that there is still abit of texture and its blended just enough to bind the mix together
  • Once blended shape your mix into 10 Burger patties
  • Fry off each side in a hot pan with a little coconut oil, until they are golden brown and crispy on each side. Then place in the oven on 180oc for ten minutes
