Chocolate Pistachio Apricots

These look elegant but are simple and quick to make. A perfect sweet treat for any time of the day.

 

Makes 2 Servings 

Equipment needed: glass bowl, saucepan, knife, food processor

Total Time: 

 

Ingredients: 

  • 5 Brazil nuts
  • 5 dried apricots
  • 50g very dark vegan chocolate
  • 50g pistachios (raw not salted)
  • 1/4 teaspoon ground green cardamom

 

Method: 

  1. Lay a piece of baking parchment on a flat surface
  2. Melt the chocolate in a glass bowl in a pan of boiling water
  3. Cut a slit in the top of each apricot
  4. Push a brazil nut into it
  5. Dip each apricot into the chocolate, dip the brazil nut end
  6. Place on the parchment
  7. Grind the pistachios in a food processor, add the cardamom and sprinkle
  8. Allow to cool until the chocolate is completely solid
