Chocolate and Chia seed Banana Bread

Perfect anytime time of the day either on its own or try it toasted with vegan yogurt, maple syrup, and berries for a winning breakfast!

MAKES 18 SLICES
Equipment needed: Loaf tin, oven, 2 x mixing bowl, food processor, spatula, whisk
Total Time: 45 minutes
Ingredients:
350g buckwheat flour
10g ground Chia seed
Water 100ml
60g cacao powder
110g coconut sugar
5g baking powder
Pinch of bicarb
350g coconut milk
80ml of coconut oil

Method:

  1. Mill the Chia seeds to a fine powder and add the water and whisk well.
  2. In a separate mixing bowl add all of the dry ingredients and put them into a food processor, blend and slowly add the milk and the coconut oil into the mix.
  3. Finally, add in all of them soaked Chia seeds and the bananas and blend until a smooth batter
  4. Pour it into the baking tray or loaf tin and bake at 160° for 30 minutes
  5. Top with nuts and seeds before baking this is your choice what you want to top/decorate it with
  6. Once cooked cool for 30 minutes and dust with cacao powder
  7. Slice and serve
