CHIA AND VANILLA PUDDING WITH FRESH MANGO

INGREDIENTS:

Makes 4 Portions:
  • 110g of chia seeds
  • 600ml of almond milk
  • 1 whole fresh mango
  • 1 tsp of vanilla paste
  • 1 tsp pink himalayan salt
  • 1 tsp ground cinnamon
  • 10g flaxseed/linseed
  • 50g flaked almonds (toasted)
  • 1 spring of fresh mint
METHOD:
  • Place your chia seeds and linseed into a large mixing bowl with your almond milk (homemade or unsweetened) to soak overnight
  • Make sure that you give your seeds a really good mix before leaving to soak. Make sure none of the seeds are stuck or clumping together
  • When they have soaked, you should have a really gelatatinous mix. Add your cinnamon, vanilla and salt
  • Toast your almonds in a hot, dry frying pan for a few minutes
  • Finely dice your mango and add to your chia seeds mix
  • Serve and top with the toasted almonds and a little chopped fresh mint
