CACAO AND COCONUT BALLS
INGREDIENTS:
MAKES 25 BALLS:
- 100g of hazelnuts
- 100g of fine desiccated coconut plus extra for coating
- 50g of raw cacao powder
- 1 tsp of ground cinnamon
- pinch of pink himalayan salt
- 100g of pitted dates
- 50ml of coconut oil
- 50ml of almond milk (homemade or carton)
METHOD:
- Before you start melt your coconut oil in a bowl of hot water. Just stand the tub in it for ten minutes
- In a food processor blend all of your dry ingredients until they are a fine powder consistency. Hazelnuts, desicated coconut, cacao, salt, cinnamon
- Add in dates and blend again until they are completly broken down
- Add in coconut oil and almond milk
- Blend until it comes to a smooth paste
- Weigh mix into 20g portions and roll between your hands into balls
- Using some more desiccated coconut roll and coat your cacao balls
- Place in the fridge to chill for 30 minutes then enjoy
