CACAO AND COCONUT BALLS

INGREDIENTS:

MAKES 25 BALLS:
  • 100g of hazelnuts
  • 100g of fine desiccated coconut plus extra for coating
  • 50g of raw cacao powder
  • 1 tsp of ground cinnamon
  • pinch of pink himalayan salt
  • 100g of pitted dates
  • 50ml of coconut oil
  • 50ml of almond milk (homemade or carton)
METHOD:
  • Before you start melt your coconut oil in a bowl of hot water. Just stand the tub in it for ten minutes
  • In a food processor blend all of your dry ingredients until they are a fine powder consistency. Hazelnuts, desicated coconut, cacao, salt, cinnamon
  • Add in dates and blend again until they are completly broken down
  • Add in coconut oil and almond milk
  • Blend until it comes to a smooth paste
  • Weigh mix into 20g portions and roll between your hands into balls
  • Using some more desiccated coconut roll and coat your cacao balls
  • Place in the fridge to chill for 30 minutes then enjoy
