BAKED AUBERGINES

INGREDIENTS:

Makes 4 Portions:
  • 2 aubergines
  • pinch of pink salt
  • cold pressed rapeseed oil
  • 10g of smoked paprika

METHOD:

Blend:
  • Half your auberines lenthways
  • Diagonally score the insides of your aubergines as per the picture above
  • Place your aubergines on to a baking tray insides facing up
  • Drizzle with oil and sprinkle over your salt and smoked paprika
  • Bake on 180C for 15 minutes making sure that they are golden brown
