BAKED AUBERGINES
INGREDIENTS:
Makes 4 Portions:
- 2 aubergines
- pinch of pink salt
- cold pressed rapeseed oil
- 10g of smoked paprika
METHOD:
Blend:
- Half your auberines lenthways
- Diagonally score the insides of your aubergines as per the picture above
- Place your aubergines on to a baking tray insides facing up
- Drizzle with oil and sprinkle over your salt and smoked paprika
- Bake on 180C for 15 minutes making sure that they are golden brown
