AVOCADO AND LIME GAZPACHO
INGREDIENTS:
Makes 6 Portions:
- 400ml of water
- 2 whole avocados (peeled and destoned)
- 1 whole cucumber
- 20g fresh coriander
- juice of 1 lime
- 1/4 of a red onion
- 1 tablespoon of cold pressed olive oil
- 1 clove of fresh garlic
- half a green chilli
- pinch of pink himalayan salt
METHOD:
Blend:
- Prep all of your ingredients into a high speed blender keeping a little bit of avocado
and coriander back for a garnish - Blend on full speed for 30 seconds – a minute
- Last second add in a few cubes of ice to chill
- Serve and garnish with the little bit of avocado and coriander that you put by at the
beginning
