AVOCADO AND LIME GAZPACHO

INGREDIENTS:

Makes 6 Portions:
  • 400ml of water
  • 2 whole avocados (peeled and destoned)
  • 1 whole cucumber
  • 20g fresh coriander
  • juice of 1 lime
  • 1/4 of a red onion
  • 1 tablespoon of cold pressed olive oil
  • 1 clove of fresh garlic
  • half a green chilli
  • pinch of pink himalayan salt

METHOD:

Blend:
  • Prep all of your ingredients into a high speed blender keeping a little bit of avocado
    and coriander back for a garnish
  • Blend on full speed for 30 seconds – a minute
  • Last second add in a few cubes of ice to chill
  • Serve and garnish with the little bit of avocado and coriander that you put by at the
    beginning
